  • 4 ears fresh corn (or 2 cups frozen corn)
  • 1 small red onion, finely chopped
  • 2 chipotle peppers in adobo sauce, chopped
  • Juice of 1 large lime (about 2 tbsp)
  • ½ cup fresh cilantro, roughly chopped
  • Pinch of salt

Instructions

  1. Boil water in a large pot. Add husked corn and cook for 5-7 minutes until tender. If using frozen corn, simply thaw it.
  2. Finely chop the red onion and chipotle peppers.
  3. In a mixing bowl, combine the cooked (or thawed) corn, red onion, chopped chipotle peppers with adobo sauce, lime juice, cilantro, and salt. Stir gently to combine.
  4. Taste and adjust seasoning if needed.
  5. Cover and chill in the fridge for at least 30 minutes for flavors to meld.
