Ingredients
- 4 ears fresh corn (or 2 cups frozen corn)
- 1 small red onion, finely chopped
- 2 chipotle peppers in adobo sauce, chopped

- ½ cup fresh cilantro, roughly chopped
- Pinch of salt
Instructions
- Boil water in a large pot. Add husked corn and cook for 5-7 minutes until tender. If using frozen corn, simply thaw it.
