Ingredients

  • 2 lbs starchy potatoes (e.g., Russets)
  • 1 cup finely chopped cabbage or kale
  • 4 tablespoons unsalted butter
  • ½ cup whole milk or heavy cream
  • ½ cup chopped green onions

Instructions

  1. 1. Prepare the Potatoes: Peel and cube potatoes evenly. Boil in salted water until fork-tender, about 15-20 minutes.
  2. 2. Cook the Greens: In a skillet, melt 2 tablespoons of butter and sauté chopped cabbage or kale for about 5 minutes until softened.
  3. 3. Mash the Potatoes: Drain cooked potatoes, return to pot, add remaining butter and milk (or cream), mashing until smooth.
  4. 4. Combine: Fold in sautéed greens and chopped green onions. Season with salt and pepper to taste.
  5. 5. Serve: Transfer to a serving dish and drizzle with additional melted butter if desired.

Notes

To enhance flavor, add garlic cloves while boiling potatoes.
