- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (14.5 oz each) diced tomatoes with juice
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Optional garnishes: sour cream and shredded cheddar cheese
Instructions
- Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain excess grease and transfer to the crockpot.
- In the same skillet, sauté chopped onions and bell peppers until soft (about 5 minutes). Add minced garlic during the last minute. Transfer to the crockpot.
- Add diced tomatoes, chili powder, cumin, salt, and pepper to the crockpot. Stir well to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Taste before serving and adjust seasoning as needed. Serve hot with optional toppings like sour cream and cheese.
