  • 1 lb lean ground beef (80% lean)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (14.5 oz each) diced tomatoes with juice
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional garnishes: sour cream and shredded cheddar cheese

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain excess grease and transfer to the crockpot.
  2. In the same skillet, sauté chopped onions and bell peppers until soft (about 5 minutes). Add minced garlic during the last minute. Transfer to the crockpot.
  3. Add diced tomatoes, chili powder, cumin, salt, and pepper to the crockpot. Stir well to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Taste before serving and adjust seasoning as needed. Serve hot with optional toppings like sour cream and cheese.
