- 1 cup shredded Monterey Jack cheese
- 1 cup diced bell peppers (any color)

Instructions
- Preheat a nonstick skillet over medium heat.
- Lay one tortilla flat and sprinkle half of the cheese on one half. Top with bell peppers and cooked chicken.
- Fold the tortilla in half and place it in the skillet. Cook for 3-4 minutes until golden brown.
- Flip the quesadilla gently and cook for another 3-4 minutes until both sides are browned and cheese is melted.
- Remove from heat, let sit for a minute, then slice into wedges. Serve with sour cream.
