  • 1 lb medium shrimp, peeled and deveined
  • 8 corn tortillas
  • 2 cups shredded green cabbage
  • 2 tbsp freshly squeezed lime juice
  • 1 ripe avocado, sliced
  • ½ cup sour cream
  • 1 tsp chipotle powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. In a bowl, mix sour cream, chipotle powder, and lime juice until smooth.
  3. Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes on each side until pink and opaque.
  4. Lightly toast corn tortillas in another pan for about 30 seconds on each side until warm.
  5. Assemble tacos by placing sautéed shrimp on tortillas, topping with cabbage and avocado slices.
  6. Drizzle with the chipotle sauce and serve immediately with lime wedges.
