Ingredients

Scale
  • 2 pounds beef chuck roast
  • 1 cup basmati rice
  • 2 medium carrots
  • 1 medium onion
  • 3 cloves garlic
  • Cumin seeds
  • Black peppercorns
  • Salt

Instructions

  1. Dice the onion, mince the garlic, slice the carrots into thin strips, and cut beef into bite-sized cubes.
  2. In a large pot or Dutch oven, heat oil over medium heat. Sauté onions until translucent; add garlic until fragrant.
  3. Add beef cubes, season with salt and pepper, and brown on all sides for about 5 minutes.
  4. Stir in sliced carrots, cumin seeds, and black peppercorns; cook for another 5 minutes.
  5. Add rinsed basmati rice and water or broth according to package instructions. Bring to a boil then reduce heat to low.
  6. Cover tightly and simmer for about 20 minutes or until rice absorbs liquid.

Notes

For enhanced flavor, marinate beef overnight with spices.

Pair with fresh salad or crusty bread for added texture.

To make it vegetarian, substitute beef with chickpeas or lentils.
