- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 4 large flour tortillas
- 1 cup sliced bell peppers (any color)
- 1/2 cup sliced yellow onion
- 2 tsp taco seasoning
- 2 tbsp olive oil
Instructions
- Heat 1 tbsp olive oil in a skillet over medium heat. Season chicken with taco seasoning and cook for about 6 minutes per side until golden brown (165°F internal temperature). Remove and let rest.
- In the same skillet, add remaining olive oil and sauté bell peppers and onions for 3-4 minutes until softened.
- Shred or chop the chicken into bite-sized pieces.
- Spread shredded cheese over half of each tortilla, layer with sautéed veggies and chicken, then top with more cheese.
- Fold tortillas in half and cook in the skillet for about 3 minutes per side until golden brown and crispy.
- Slice into wedges and serve with salsa or sour cream.
