- 2 cups fresh strawberries, hulled and chopped
- 1 tablespoon sugar (for strawberries)
- 1 quart high-quality vanilla ice cream, softened
- ½ cup heavy cream
- 1 cup crushed shortbread cookies
- 1 tablespoon sugar (for ice cream mixture)
Instructions
- Prepare the strawberries by washing, hulling, and chopping them into small pieces. Mix with 1 tablespoon of sugar and let sit for 10 minutes to create a syrup.
- In a large bowl, combine softened vanilla ice cream with heavy cream and mix until smooth.
- Line an 8-inch square baking pan with parchment paper. Layer half of the crushed shortbread cookies on the bottom.
- Pour half of the ice cream mixture over the cookies, followed by half of the strawberry mixture.
- Repeat layers with remaining cookies, ice cream mixture, and strawberry mixture.
- Cover with plastic wrap and freeze for at least four hours or until firm.
- Once frozen, cut into bars and serve chilled.
