Description

  • 2 cups fresh strawberries, hulled and chopped
  • 1 tablespoon sugar (for strawberries)
  • 1 quart high-quality vanilla ice cream, softened
  • ½ cup heavy cream
  • 1 cup crushed shortbread cookies
  • 1 tablespoon sugar (for ice cream mixture)

Instructions

  1. Prepare the strawberries by washing, hulling, and chopping them into small pieces. Mix with 1 tablespoon of sugar and let sit for 10 minutes to create a syrup.
  2. In a large bowl, combine softened vanilla ice cream with heavy cream and mix until smooth.
  3. Line an 8-inch square baking pan with parchment paper. Layer half of the crushed shortbread cookies on the bottom.
  4. Pour half of the ice cream mixture over the cookies, followed by half of the strawberry mixture.
  5. Repeat layers with remaining cookies, ice cream mixture, and strawberry mixture.
  6. Cover with plastic wrap and freeze for at least four hours or until firm.
  7. Once frozen, cut into bars and serve chilled.
