Description

Sparkling Shamrock Cookies are a delightful treat perfect for celebrating St. Patrick’s Day. These vibrant green cookies, adorned with shimmering sugar, offer a soft and chewy texture that will please both kids and adults.

Ingredients

Scale
  • 2 ¼ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • Green food coloring
  • Sparkling sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour and baking powder.
  3. In a large mixing bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in the egg, followed by vanilla extract and green food coloring until well combined.
  5. Gradually mix in the dry ingredients until just incorporated.
  6. Scoop tablespoon-sized portions onto prepared baking sheets, sprinkle with sparkling sugar, and bake for 10-12 minutes or until edges are lightly golden.
  7. Let cool slightly before transferring to plates.

Notes

For vibrant color, use gel food coloring instead of liquid.

Experiment with flavor by adding mint extract for a refreshing twist.

Store leftover cookies in an airtight container for up to one week or freeze them for longer shelf life.
