- 4 cactus pads (nopales), cleaned
- 2 ripe Roma tomatoes, diced
- 1/2 medium red onion, thinly sliced

Instructions
- Preheat grill or grill pan over medium-high heat. Brush cactus pads with olive oil and grill for 4-5 minutes on each side until tender and slightly charred.
- While grilling, chop tomatoes, slice red onion, and chop cilantro.
- After grilling, let the cactus cool slightly, then dice into bite-sized pieces.
- In a large bowl, combine grilled cactus, tomatoes, red onion, and cilantro.
- Drizzle lime juice and olive oil over the mixture; season with salt and pepper to taste.
- Optional: Chill in the refrigerator for 30 minutes before serving for enhanced flavors.
