Grilled cactus paddles combine beautifully with ripe tomatoes, crunchy red onions, and aromatic cilantro, all tossed in zesty lime juice. Ingredients

  • 4 cactus pads (nopales), cleaned
  • 2 ripe Roma tomatoes, diced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat. Brush cactus pads with olive oil and grill for 4-5 minutes on each side until tender and slightly charred.
  2. While grilling, chop tomatoes, slice red onion, and chop cilantro.
  3. After grilling, let the cactus cool slightly, then dice into bite-sized pieces.
  4. In a large bowl, combine grilled cactus, tomatoes, red onion, and cilantro.
  5. Drizzle lime juice and olive oil over the mixture; season with salt and pepper to taste.
  6. Optional: Chill in the refrigerator for 30 minutes before serving for enhanced flavors.
